Abstract

Abstract Fat-water emulsion systems are de-emulsified by impressing direct current electrical energy therethrough and positioned such that a carefully defined anolyte stream is formed. The anolyte stream, having low pH values, breaks the emulsion, enabling the fat to rise to the surface and to be skimmed off.
