Abstract A STABILIZER COMPOSITION PARTICULARLY USEFUL FOR STABILIZING COMESTIBLE COATINGS SUCH AS SUGAR GLAZES, IS FORMED FROM A MAJOR AMOUNT OF MALTO-DEXTRIN, AND MINOR AMOUNTS OF TAPIOCA DEXTRIN AND GEL-FORMING SUBSTANCES.
