Abstract THE PRESENT INVENTION RELATES TO A SHORTENING WHICH IS PARTICULARLY USEFUL IN PRODUCTS WHICH ARE HEATED PRIOR TO CONSUMPTION. EDIBLE OILS ARE MIXED WITH SILICON DIOXIDE AND A BRIDGING COMPOUND AND THE RESULT IS A SHORTENING THAT WILL NOT WEEP OR RUN AT ELEVATED TEMPERATURES, WHICH RETAINS DESIRABLE MOUTH FEEL CHARACTERISTICS OF THE UNTREATED OIL.
