Abstract
Abstract A process of producing a cook-in-the-bowl type of hot breakfast cereal is disclosed. The process involves selecting a specific milled fraction of grain and flaking the grain to a thickness of 0.007 to 0.008 inch. The thin flakes are capable of rehydrating rapidly in boiling water to produce a hot breakfast cereal of the instant or cook-in-the-bowl type.
