Abstract
Abstract A method of solubilizing insoluble collagen which comprises treating said insoluble collagen at a temperature of 0* 37* C., at a pH of 1.5 to 3.0 with the collagen solubilizing proteolytic enzyme produced from specific micro-organisms having an optimum activity for solubilizing milk casein at a pH of 2.2 to 2.4.
