Abstract
Abstract Compositions of demineralized dry whey solids and either monosodium phosphate or insoluble metaphosphate are provided which exhibit functional properties in food compositions as well as nutrient value. The phosphate is present in an amount of at least one percent based on protein. The demineralized dry whey solids contain no more than 5.0 percent by weight of whey minerals. These compositions are preferably used as replacement, total or partial, for sodium caseinate in nonbutterfat dairy products.
