Abstract STARCH MAY BE MADE MORE SUSCEPTIBLE TO CONVERSION BY STARCH LIQUEFYING ENZYMES BY TREATING IT WITH ACETIC ANHYDRIDE IN AN ALKALINE MEDIUM CONTAINING HYDROGEN PEROXIDE AND FERROUS SALTS TO EFFECT A CONSIDERABLE LOWERING OF STARCH SWELLING TEMPERATURE WITHOUT SIGNIFICANT STARCH DEGRADATION, GELATINIZATION INHIBITION, OR BROWNING.
