Production of alginic acid jelly
Abstract
Abstract PURPOSE:To hygienically produce a homogeneous alginic acid jelly having firm texture and useful in the field of food, by mixing a component containing alginic acid with a metallic compound having alginic acid gelatinizing activity and gelatinizing the mixture. CONSTITUTION:A component containing alginic acid (e.g. sodium alginate or potassium alginate) is mixed with a metallic compound having alginic acid gelatinizing activity (e.g. calcium sulfate) and, as necessary, a reaction accelerator in the presence of water while successively forming metallic ions. The obtained mixture is preferably mixed with KONJAK (devil's-tongue) mannan paste produced by peptizing KONJAK mannan. The mixture is discharged from the mixer without delay before the gelling indication of alginic acid is recognized. The discharged mixture is gelled and formed to obtain an alginic acid jelly. In the case of using a reaction accelerator, it is preferable to mix and disperse 0.002-0.1wt.% of polymerized phosphoric acid to the jelly.
