Abstract

Abstract PURPOSE:To obtain a carbonated jelly having the characteristic stimulative action of carbonic acid sufficiently, and giving refreshing feeling, by mixing an aqueous solution containing carbonic acid with an aqueous solution of gelatin at a specific temperature range below the freezing point under stirring, a adjusting the temperature of a mixture a little, filling the mixture in a vessel, and refrigerating at a temperature below the gelling temperature of gelatin to form a gel. CONSTITUTION:An aqueous solution containing carbonic acid, e.g. cola, soda pop, etc. is mixed with an aqueous solution of gelatin at an atmospheric temperature of about -10--40 deg.C under stirring. The atmospheric temperature can be achieved by using a refrigerant gas such as N2 gas, dry ice, etc. The mixture solution is stirred and mixed until the temperature is raised to -10-+10 deg.C, and filled in a proper container when the fluidity of the mixture is increased to enable the filling in the container. The mixture filled in the container is refrigerated at a temperature below the gelling temperature of gelatin, preferably at 0-15 deg.C to effect the gelatinization of the mixture and obtain the objective carbonated jelly.
