Thickening and gelatinizing agent composition

Abstract

Abstract PURPOSE: A thickening and gelatinizing agent for liquid oil, capable of dissolving a polar substance, e.g., water, and safe as a food additive, obtained by mixing a specific hydrophilic fatty acid ester of sucrose with a (fatty acid ester of) polyfunctional alcohol. CONSTITUTION: The desired composition consisting of A) a hydrophilic fatty acid ester of sucrose having a HLB not less than 10 and B) (i) a polyfunctional alcohol (e.g., ethylene glycol, etc.) and/or (ii) a fatty acid ester of a polyfunctional adcohol (preferably ≥4C fatty acid ester), having a combined HLB of the ingredients A) and (ii) of 8W12. Preferably 10W50wt% ingredient A is blended with 30W70wt% ingredient (ii) and 5W60wt% ingredient (i). Water, a lower alcohol, etc. are added in order to increase uniform stabilization, viscosity regulation, etc. addition of 5W40wt% composition to liquid oil forms good gel.
