Ice glazing agent
Abstract
Abstract PURPOSE: To improve the moisture inhibition, adhesion to food, and prevention effect of cracking or peeling of films, while retaining the unique rheological properties of the phosphate, by using potassium polyphosphate and a sugars. CONSTITUTION: An ice glazing agent comprising (A) sugars, e.g. monosaccharide such as glucose, mannose, galactose, or fructose, disaccharide such as maltose, cellobiose, or saccharose, or trisaccharide, such as mannotriose or cellotriose, and (B) potassium polyphosphate of formula I: (n is preferably≥1000), at a weight ratio of (A) to (B) of 100:0.1W50. A powdery sodium salt for solubilizing (B) is mixed with the agent, and then dissolved in water to prepare a glazing solution. COPYRIGHT: (C)1980,JPO&Japio
