Alkyl 3-alkylcarbonyl oxy-cis (or trans)-5-octenoate, its preparation and use
Abstract
Abstract NEW MATERIAL:A compound of formula I: (R is H, alkyl, or alkenyl group; R 1 is H or -COR 2 ; R 2 is H, alkyl, or alkenyl group). EXAMPLE: Ethyl 3-hydroxy-trans-5-octenoate. USE: Flavor enhancers and modifiers for fruits, and an intermediate for flavor components of apples. PROCESS: A compound of formula II is reacted with a compound of formula III: (R is alkyl or alkenyl group; X' is halogen) in the presence of a metallic zinc to give a compound of formula IV, which is reacted with a compound of formula V: (X is OH, halogen or O; n is 2 when X is 0; and 1 otherwise) to form the compound of formula I: (R is alkyl or alkenyl group; R 1 is -COR 2 ). The compound of formula IV. (Q is H or -COCH 3 ) which is a flavor component of apples, can be obtained from the compound of formula I. COPYRIGHT: (C)1980,JPO&Japio
