Treating sea prods. with poly:phosphate(s) and sugars and cooling - to preserve without loss of nutrients
Abstract
Abstract The process particularly for fish and crustacea comprises compensating at least partly the less of natural phosphates due to glycolysis and decomposition, eliminating the gellinagen, and cooling the flesh to below 4 deg.C. A pref. process comprises treating the prod. with, or immersing it in, an aq. soln. contg. polyphosphates, reducing sugars and salt, whilst simultaneously cooling. A powder compsn. for use in the process comprises reducing sugars and slightly or moderately condensed polyphosphates. The process enables less wt. and nutritive material loss, preserves the freshness for a longer time, and results in a lower content of toxic and bacterial substances. It is inexpensive and easy to operate.
