Ce procédé consiste à générer au moins une image vidéo de chaque objet au moyen d'une caméra vidéo (3, 4), à saisir en temps réel le signal analogique vidéo de chaque image et à le convertir en une matrice de codes numériques représentatifs des niveaux de gris des points, à mémoriser et à traiter par le calcul chaque matrice de codes numériques de façon à générer une série d'informations numériques représentative des valeurs paramétriques de l'objet, et à effectuer sur ces séries d'informations des tests fonction du tri à réaliser pour délivrer des informations de classement exploitables.
