Abstract

Abstract A soluble meat protein product in the form of a dry protein powder or concentrated solution is produced from any meat muscle. The preferred route is via pre-rigor meat finely comminuted, in the presence of a solution of sodium chloride and food phosphate. The resulting slurry may be spray dried to produce a powder which is stable at ambient temperatures and from which can be prepared a solution with the property of forming strong gels on heating.

Claims Analysis

Total Claims: 18
Claim 1
Independent Claim 60 words
A process for the production of a protein material from meat muscle, characterised in that the muscle protein is treated in a saline solution to dissolve lean meat protein in the solution and at least part of the water content is removed to obtain a concentrated product with soluble material that is capable of gelling when heated in aqueous solution.
Claim 2
Dependent Claim 60 words
A process for the production of a protein material from meat muscle, characterised in that the muscle protein is treated in a saline solution to dissolve lean meat protein in the solution and at least part of the water content is removed to obtain a concentrated product with soluble material that is capable of gelling when heated in aqueous solution.
Claim 3
Dependent Claim 16 words
A process according to claim 1 wherein the meat muscle is finely divided in said solution.
Claim 4
Dependent Claim 21 words
A process according to claim 1 or claim 2 wherein the solution is spray-dried to produce said material in powder form.
Claim 5
Dependent Claim 31 words
A process according to any one of claims 1 to 3 in which the meat muscle is subjected to treatment in the saline solution before it has passed through riser mortis.
Claim 6
Dependent Claim 15 words
A process according to claim 4 when the saline solution also contains a food phosphate.
Claim 7
Dependent Claim 49 words
A process according to any one of claims 1 to 3 wherein post rigor meat muscle is used and the material is extracted in a cold saline solution containing both salt (sodium chloride) and a food phosphate for converting insoluble protein present in the meat muscle into soluble constituents.
Claim 8
Dependent Claim 25 words
A process according to claim 6 wherein the solution is maintained at a temperature not substantially greater than 5 0 C during the conversion process.
Claim 9
Dependent Claim 30 words
A process according to any one of the preceding claims wherein the temperature of the water-soluble protein material is restricted substantially throughout to not more than 40 0 C .
Claim 10
Dependent Claim 19 words
A process according to claim 8 wherein the temperature of said material is restricted to not more than 30°C.
Claim 11
Dependent Claim 31 words
A concentrated meat protein product characterised in that it comprises soluble natural meat protein, salt, and comminuted insoluble meat protein, and has gelling properties in aqueous solution at temperatures above 50°C.
Claim 12
Dependent Claim 31 words
A concentrated meat protein product characterised in that it comprises soluble natural meat protein, salt, and comminuted insoluble meat protein, and has gelling properties in aqueous solution at temperatures above 50°C.
Claim 13
Dependent Claim 23 words
A meat protein powder characterised in that it comprises actin and myosin and has gelling properties in aqueous solution at temperatures above 50°C.

A protein product according to any one of claims 10 to 12 comprising the whole content of lean meat muscle as a mixture of water-soluble protein and finely divided insoluble particles.
Claim 18
Dependent Claim 23 words
A meat product in which a protein product according to any one of claims 10 to 14 has been included as an additive.
